Tere Çorbası (Turkish Watercress Soup)
With all the cold weather that we are experiencing I thought a nice heartwarming soup would go down well.
You can get Tere in the green grocers. It looks like baby spinach.


30g butter
1 onion, finely chopped
450g potatoes, peeled and cut into cubes
1 litre vegetable stock
150g tere,chopped
salt and freshly ground black pepper

Melt the butter in a large saucepan. Add the onion and sweat slowly until soft.
Add the potato and sweat for a further 5 minutes. Add the stock, season with salt and pepper and bring gradually to the boil. Simmer until the potatoes are soft.
Add the chopped tere and simmer for a further 2-3 minutes.
Remove from the heat, cool for a minute or two and then whizz in a blender until smooth ( I always double blend).
Return to a clean saucepan and reheat, adding more salt and pepper if desired.

For a more "peppery" taste, Rocket can be used instead of Tere.
