Red lentil, bulgur & mint soup (Ezogelin çorbasi)
Adapted from The Sultan's Kitchen: A Turkish Cookbook, a 1998 cookbook by ozcan Ozan, who owns Sultan's Kitchen restaurant in Boston.

Turks like ground or flaked red pepper that's slightly moist, coarse and usually labelled "pul biber." You could substitute paprika, Indian chili powder or red chili flakes if you can't visit a Turkish market. Dried mint and bulgur are also popular ingredients with Turks.
