Pea & Lettuce Soup
I have had lots of lettuce growing in the garden for ages now, and although they are all trying to bolt they are lovely.

Here's a pea and lettuce soup, dead easy and very quick!

Take a small head of lettuce and cut up roughly. A mug of frozen (or fresh) peas, 6-7 leaves of well chopped mint, small onion, salt and pepper. Add all this to some chichen/veg stock. Bring to boil and simmer for approx 8-10mins until the peas are cooked. Done! It refreshing either hot or cold.
