I have a nice and easy muffin recipe that I would like to share with you all (yes I do cook now and then):)

Ingredients: (makes 12 muffins)

340g/12oz Flour (plain, self rising, or wholemeal self rising)
1tsp bicarbonate of soda if using plain flour
225g/8oz soft brown suger
110g/4oz butter (zap in the micro for 20 secs)
small tub of plain yoghurt
2 eggs (beaten)
stuff to chuck in to the mix


1. Preheat the ove to 200c/400f/ gas mark 6
2. Whisk the suger, butter, yoghurt and eggs until smooth
3. Mix the flour into the mixture using a spatula or something similar
4. now for the fun part, I always try different combinations. For my latest version I chucked in a;

  • handful of dried chopped cranberries
  • chopped some pitted soft prunes
  • chocolate drops
  • handful macademia nut halfs
  • couple of tablespoons of leftover chocolate & hazelnut spread
  • grated carrot

mix the lot and fill 12 muffin tins or paper cups
bung it in the oven for about 25 minutes, take them out when done and let them cool.

Yes he has something to tell us [:0] He has three hands [:0][:0][:0] I bet that made the muffin making easier, two to cook and one to clean up after yourself :D;)

The nail vanished hands belong to my wife Anne, she just came back after having them done (while I was slaving over a hot oven), the other hand belongs to my son Mustafa, they were getting ready to sample the fresh muffins [:p][:p]

And the muffins were yummmmy [:p][:p]

p.s. I have been told to come clean about the washing up, as I don't do any ;)


You fellas, a hard life [:0][:0] give us a break [:p] I'm going on a break a week tomorrow just in case I forgot to let you all know ;) Anne is on her way now :D
