Cat mad and unashamed
Muffins are my favourite thing because they are so easy to make, you can experiment with different ingredients and they are quick to whip up if you get unexpected guests.

You can use proper muffin tins and paper cases but İ just use bun tins and normal paper bun cases and get about 20 muffins out of the mix depending on how much fruit İ have thrown in.

All you need is 2 mixing bowls. Shove the dry ingredients in one and the wet in the other then mix wet into dry quickly with a light hand. Don't overwork the mix. Spoon into cases and bake for 10-15 mins or till they look the right colour.

Apple & Walnut


1 3/4 cups flour (sift it 3 times - ıt's worth the faff)
sachet baking powder
sachet vanilla powder
1/4 tsp cinnamon (optional)
3/4 cup sugar
1 1/2 cup grated apple (or finely chopped for a chunky texture)
1/2 cup chopped walnuts

Note: add apple and nuts last and gently mix in before adding beaten wet ingredients


2 eggs
1/2 cup oil

Beat wet stuffs together then gently stir into dry stuff.

Bake in preheated oven for about 15 mins on 180 degrees.

Choc & Banana


2 cups flour
50g cocoa
1 sachet baking powder
1 sachet vanilla powder

Sift together 3 times

then gently stir in;

3/4 cup suger
2 ripe small bananas chopped very small


2 eggs
1/2 cup oil
1/2 cup milk

Beat wets together then stir into dry ingredients gently. Don't overwork.

Bake at 180 degrees for 10-15 mıns

Try experimenting with a small bar of bitter chocolate bashed into small pieces or walnuts or hazlenuts.
