GREEN GRAPE SORBET
500g seedless green grapes
3 tablespoons clear honey
1 egg white
Puree the grapes in a blender, then sieve for a smooth liquid.
Whisk in honey.
Turn the grape mixture into a shallow freezerproof container. Freeze for 3-4 hours.
Puree in a blender until smooth.
Whisk the eggwhite until firm. Fold into the grape mixture. Refreeze until the mixture is just firm.
Serves 4
WATERMELON SORBET
250g watermelon
2 tablespoons sweet white wine or Cointreau
juice of ½ orange
1 teaspoon grated orange rind
1-2 tablespoons clear honey
1-2 egg whites
Remove the seeds from the watermelon.
In a blender or food processor, puree the watermelon with the wine, orange juice, rind and honey.
Turn the watermelon mixture into a shallow freezerproof container and freeze for 3-4 hours.
Puree in a blender until smooth.
Whisk the egg whites until firm but not dry. Fold into the watermelon mixture. Refreeze until just firm.
