Leek and Potato Soup
2lb potatoes cut into biggish chunks
2 leeks washed and chopped
1 oz butter
1 pint milk
1 pint ham or chicken stock
pinch nutmeg (more can be added later for taste)
salt/pepper (i use coarse black pepper)
2 egg yolks
chopped parsley for garnish
method
boil the potatoes in milk and stock, removing any scum from pan
add leeks, butter, nutmeg and seasoning
cover pan with lid and simmer gently until tender
liquidise in blender (or use hand blender)
return the soup to the wiped pan, check seasoning
bring back to the boil and add 2 lightly beaten egg yolks
stir well and serve with thick crusty bread.
*i also add a small tub of single cream at the end*
