Helen's Prawn tomato and Fenugreek curry
Helen’s Prawn Tomato and Methi Curry
This recipe was given to us by ‘Helen’ an Indian ‘maid’ in the science department at the Gulf English School in Kuwait in 1990. We remember her fondly.
• 1 large potato
• 3 large tomatoes skinned chopped and reduced (or 1 tin of toms)
• 1 large onion finely chopped
• 250g prawns (peeled)
• 5 Tbs of cooking oil
• 4 teeth of garlic
• ½ tsp cumin seeds
• 1 tsp black mustard seeds
• 2 tsp Methi leaves(Fenugreek leaves, usually dried brought from UK)
• *2 tsps cumin and coriander powder (C and C)
• 1 tsp Chilli powder
Add mustard seeds and cumin seeds to hot oil.
Fry onions and garlic in oil until soft add C and C fry for another minute.
Add tomato and potato cook until potatoes are soft.
Add prawns and Methi
Add salt to taste
Cook for about 4 mins until prawns are cooked serve with rice or Naan bread
*I grind them together and store as ‘C and C’. If adding separately use 1 tsp of each.
