Corned beef

Hi all, I suppose I’m missing the little home comfort foods, but now and then I love a corned beef hash or sandwich with pickle. Anyway I’ve found some, yay!

School dinners with yellow fat and smelling like army rejects.

My Nan used to make corned beef & potato pasties. As kids we used to live them. I haven't had one in about 20 years

Bake half a dozen small to medium sized potatoes, slice in half and scoop out the flesh, mix the flesh with corned beef and lightly fried finely diced onion.
Garlic and chilli can be added, I don't, place the flesh back in the skins and bake further, a small amount of grated cheese can be added to crisp on top, again I don't, I serve with a tomato jus (ketchup), truly first class cordon bleu snacking food.

Chippies have different origins, ours are essentially NW Uk style [Fish and a split luv] or Scots [ A fish supper hen], we once had a Yorkshire one, it placed a slice of corned beef between two slices of spud, battered then fried, British Bulldogs they named them, V nice they were as well.

Chitterlings were a regular on Saturdays in Wolverhampton market together with tripe. I remember as a small child there was a specialised tripe butcher. I also remember local news coverage when the last chitterling twister retired.

Our rite of passage as nippers was the step into Clague's tripe dressers and ask "Do you have pigs trotters?"
The Lady behind the huge counter , heard it all before would reply
"Yes son "
Then quick as a whip we would give it, "Well no wonder you walk so funny"

I was brought up in the quaint village of Levenshulme with its duck ponds and cricket greens, not far from where the factory was How tripe went from popularity to a hard-to-stomach speciality

I had a cat once who we nicknamed 'dustbin' because he would eat anything and everything. When we decided to try tripe and onions, it made both of us feel sick. So, we put the remains down for Boo-Boo (his proper name), who sniffed it and gave us both a cat-dirty look, and walked away with his nose in the air.

Mind you, we are all being fed a lot of tripe at present from No. 10!
