Here's a quick carrot mezze for you.

Grate about 5/6 carrots, peel and chop 2 gloves of garlic.
Fry the carrots and garlic in a little olive oil until cooked and slightly brown.
Cool off then mix into a good yogurt, i prefer a susme yogurt.
Takes all of 10 minutes and is great for a mixed mezze plate.

Ahhh Lara sarımsaklı havuç, one of my favourites :)

A good tip is also to add a teaspoon of sugar to the carrots when cookiing. Really brings out the flavour.

Here is a Panjabi one for you.

Put 1 - 2 table spoons of oil in wok. Heat. Add 1 - 2 tea spoon of mustard seeds. When the seeds are all popping (takes 10 - 15 seconds or so) add 3 - 4 grated carrots. Stir briefly (15 - 30 seconds, no longer). Turn out of the wok into a bowl. Sprinkle with a little chilli powder (if desired). Pour the juice of a lemon over the carrots. Mix.

Works equally well with Mouli or any large radish.

Great as a mezze or as a side.

I posted this one before, so easy and you can adapt it to your own tastes.This is so easy and quick.

Carrot and Honey Soup

Peel and chop a kilo of carrots, one clove of garlic, and one onion, fry in butter until soft.
Add salt and black pepper to taste.
Add one pint of veg stock and boil.

When carrots are cooked, blend and add honey, I tend to go for about one table spoon, but depends on how sweet you want it,

Serve with crusty bread toasted.


I have another recipe for Carrots and Barbunya, I love it but it does take a bit of faffing about, if anyone wants it just let me know.
